I requested an interview with a profile, what is the process from there?

If you have shared your availability, the freelancer will be able to indicate if he/she is available for the proposed time slots. If so, you will receive an email with their confirmation and contact details to send them an invitation. If she/he is not available, you will receive alternative time slot proposals.
At any time, the acracy team is available to help you set up the interview.
